Roast the Perfect Wurrook Superfine Prime Leg

(1.5kg Superfine Leg, Superfine Boneless Leg)
Nothing is more Australian than a Merino Roast Leg.

Pre heat your oven to 220ºC

Method
Rub the outside of the leg with 2-tblspn olive oil and a generous amount of salt and pepper. Place leg on a wire rack sitting on a roasting tray, this will enable the heat to evenly roast the leg from all sides.

Cooking Time and Temp
Put into hot oven (220ºC) for 20 minutes before turning down the heat to 160ºC. This seals the outside of the leg and locks the flavour and moisture inside.
A 1.5kg leg should take between 2 - 3 hours depending on your oven and how you like your meat cooked. If you have a meat thermometer, 60ºC is just about right for medium/pink.

Note: Rest for 1/2 hour in a warm place before carving and serving. This allows the meat to relax, and retain its moisture and tenderness.

Peel and cut lengthways 10 cloves of garlic, put them in a bowl, add a teaspoon salt and pepper and mix. Cut small incisions with a paring knife 5 - 7cm into the leg. Put the cloves into the incisions, the more the better, and push some picked fresh rosemary in as well.
