Tips for a Tender Wurrook Superfine Prime Rack Roast

(Superfine Rack)

The best way to cook a Rack is to seal it in a pan first and then oven roast it.

Preheat your oven to 200ºC

Method

On a board or plate, spread/ sprinkle a generous amount of salt and freshly cracked pepper on all sides of the rack.
In a hot fry pan (one that is oven proof is best), seal the rack fat side down first. This will help to render some of the fat. Using tongs seal all other sides of the rack to a dark golden brown.

Place in your oven on a tray/ rack/ pan, fat side up.

 A 4 Point Rack - Medium/Pink - should take about 25 minutes depending on your oven.

For the 8 Point Rack cook in the oven for 40 minutes to achieve medium/pink.

Remove the rack from the oven and rest in a warm place or, turn off the oven and leave the door open for at least 6 minutes. This will give you time to pour yourself a well deserved glass or wine.

On a chopping board, cut between the bones, with a sharp knife to divide. Arrange on plate, with some garlic mash potato, buttered green beans and some mint sauce.
