Zesty Herb Wurrook Superfine Prime Cutlets

(Superfine Rack sliced into cutlets)

Cutlets come from the rib area of the Superfine Merino.
These are quick cooking and tender cuts.
Cook on a medium to high heat to seal, turning frequently whilst cooking then rest for a few minutes before serving.

A quick, tasty marinade that works well...

Method (based on 6 cutlets).
Place cutlets in a bowl and add:
1 teaspoon rough chopped thyme or rosemary
2 cloves rough chopped garlic
2 tab extra-virgin olive oil
Zest of 1/2 lemon
Salt and fresh cracked pepper to taste

Allow the cutlets to marinade for at least 10 minutes, the longer the better.

Cooking Time and Temp
Preheat grill pan to hot, then turn to medium and add cutlets. Seal to a light golden colour, 1 to 2 minutes on each side. Turn every 2 minutes to enable even heat on either side. After 10 - 15 minutes cutlets should be cooked (depending on how you like them). Rest for 3 to 4 minutes, before serving. Serve with a squeeze of lemon and spinach, pine nut and goat’s cheese salad with a balsamic dressing.
